Turkish Stews

One kind of Turkish stew is called güveç, which consists, usually, of meat and vegetables stewed together in a clay pot with their own juices. The clay stewing pot, which looks like the kind of ovenproof earthenware bowl used for French onion soup, is called a güveç. Another class of stews is called sahan, in which the meat is cooked with salca, "sauce," usually tomato puree. A third type of stew is called yahni, in which vegetables and pulses are thrown into the stew pot.
